Tex-Mex Chicken and Rice Casserole

So for dinner I made a quick and easy casserole that was a huge hit with the whole family! Don’t you just love when that happens.

Sorry for the not so great picture. When the casserole came out of the oven it smelled so good I had to fend off the Hubs to get a picture before he dug in to the casserole.

Ingredients:

2 cooked and shredded chicken breasts

1 can rotel drained

1 can cream of chicken soup

1/2 can refried beans

1/2 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

2 cups cooked rice

All I did was mix all of the ingredients except the cheddar cheese in a casserole dish then topped with the cheddar cheese and baked at 350 degrees for 20 minutes. I finished off the last 5 minutes on Broil since we like crispy cheese here at the HoB!

So simple but so yummy! The best part is the hubs and I both have leftovers for lunch tomorrow!! Enjoy!!
